  4. Mix the cocoa with boiling water until it forms a paste.

  6. Add the soft butter, then the sugar, flour, baking powder and milk. Then mix until smooth..

  8. Bake for about 30 minutes then leave to cook on cooking rack..
  9. For the filling (ganache): warm the cream until almost boiling then add the chocolate and stir until melted..
  10. Leave the ganache to cool for about 15 minutes in the fridge so it doesn’t slide off the cake.
  11. Coat one sponge with jam and then cover with ganache.
  12. Add the top sponge, add more jam and the rest of the ganache.
  13. Grate white chocolate on top.
