  1. For the pastry, place flour, salt and sugar in a stand mixer bowl and stir till combined. With a flat beater attached, add in cold butter dices and mix till the butter crumbles into the flour. Add water and mix till the dough comes together. Wrap the dough in plastic wrap and chill for 10 mins..
  2. Roll the pastry into tart rings, poke the base with fork and chill for another 10 mins. Once chilled, bake the pastry for 10 mins at 200 Celsius..

  6. Once completely cooled, break into pieces and process in food processor till it turns into a paste..
  7. In a separate bowl, Place cream in a bowl over a pan of simmering water. Add the chocolates to the warm cream and allow them to melt without stirring..
  8. Once fully melted, stir in the butter and praline paste and whisk to combine. Remove from heat and allow to cool completely..
  9. To assemble, sprinkle the base of the tart shells with chopped nuts, filled the ganache to the top..
  10. Allow the tarts to set in fridge. Garnish with some gold dusted hazelnuts or gold leaves..
