  2. Beat until mixture is smooth and return to heat..
  3. Cook until mixture comes together about 1 minute.
  4. Cool and add beaten eggs gradually,beating with a wooden spoon.The spoon should stand up in the mixture..
  5. Put on a greased tray in dessertspoons.Bake in oven at 190c/375f for 30 min.Donot open oven for the first 15 minutes..
  6. When cooked,cool on wire tray,pull any uncooked dough from centre and fill with whipped cream,sweetened with icing sugar and vanilla,.
  7. Sprinkle with icing sugar or ice with chocolate icing..

Pipe the choux pastry into longer ropes, you end up with log-shaped Γ©clairs, ready to be filled with pastry cream and drizzled with chocolate icing. Or make profiteroles: fill cream puff shells with. Shape into desired shape or size and make them as high as possible. (Use pastry tube or two spoons). The puffs should be golden brown and light weight. There are several cream puff recipes out there, but this vanilla pastry cream is a bit different from the others and it's really wonderful.
